Bio
Eileen O’Connor was a neonatal nurse whose hands cradled thousands of lives before they’d taken their first breath. Raised in a devout Irish Catholic family, she brought faith and fierce compassion to every hospital shift. Her garden in Rockville Centre bloomed with roses and shamrocks, and she played Irish folk music while baking soda bread for her grandchildren. Eileen believed in miracles, but she also believed in hard work. She was our miracle.

🍞 Irish Soda Bread with Caraway Seeds

Ingredients:
- 4 cups all-purpose flour
- ½ cup white sugar
- 2 tsp baking powder
- 1 tsp baking soda
- ¾ tsp salt
- 3 cups raisins
- 1 tbsp caraway seeds
- 2 large eggs, lightly beaten
- 1¼ cups buttermilk
- 1 cup sour cream
Instructions:
- Preheat oven to 350°F. Grease a 9-inch round pan.
- Mix dry ingredients and stir in raisins and caraway seeds.
- Blend eggs, buttermilk, and sour cream; stir into flour mixture.
- Knead gently, shape into loaf, and score top.
- Bake 65–75 minutes until golden. Cool on wire rack.
